The Green Egg stands for a new era.
Meat is expensive, Meat is harming animals, Meat is heating the planet. Plant based cooking becomes more and more a thing. It’s a hype – there’s no way around it.
But it is still true and right: We need to change. The whole tradition of eating needs to change. The Green Egg is change. The Green Egg is transformation.
We have to understand, that dinner and high class cuisine doesn’t have to involve meat. Where is the point in roasting just another steak? Meat has been in the centre of nearly every meal for hundreds of years. It became a mindset. Amuse-Gueule, Carpaccio, Steak, Fish, Desert, Bye.
Who decided it has to be like that? Why is meat always first? Why can’t people think of a proper full meal when they stand in front of the fruit shelf? There are more then 160 3-Michelin Star restaurants but only one is vegan… what more do we need to say?
Vision is what we always missed in fine dining.
From now on The Lovelace and its new Chef de Cuisine Matthias Barthelmes will walk new paths every Friday. Using new and old techniques that were originally invented for cooking meat, we will show you the true potential of local vegetables and seasonal fruits. We’ll smoke, sous-vide, ferment and slow cook it all – creating true umami orgasms.
Enjoy 4 courses with a carefully picked wine accompaniment for every single one of them. If you’re not the alcohol drinking typ of person – we will serve you fresh juice-creations.
